Need a quick snack? Try these roasted chickpeas seasoned with paprika, lemon zest and tossed in oil. Serve warm for a tasty treat!
Preheat oven to 400 degrees.
Thoroughly drain and rinse chickpeas, then blot with a paper towel to dry them. Be sure to dry thoroughly or the cook time will be longer.
In a medium bowl, toss chickpeas with olive oil, salt, garlic powder, and smoked paprika. Spread on a baking sheet, and bake for 15-20 minutes, stirring occasionally, until browned and crunchy. Watch the last few minutes carefully to avoid burning.
Once cooked, sprinkle parsley and lemon zest on top of chickpeas while they are still warm. Toss to combine and serve. Enjoy!
