Applesauce Muffins

Who’s ready to BAKE?!

Join us as we make applesauce muffins from scratch with Jenny Robinson, owner of TBK Leawood, KS, and her sous-chef Casey! Learn the trick to whipping up these delicious applesauce muffins. They really are as good as they sound. Yum!

The tools that you will need are mixing bowls, measuring cups, measuring spoons, muffin tin, paper liners, spoon, whisk, cupcake scoop, oven mitts and a timer.

This is one of the videos that launched our At-Home Cooking Club in the early days of COVID. Applesauce Muffins Recipe

Makes 12 standard muffins

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 2/3 cups light brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 1/2 cups applesauce (non chunky)

Instructions

  • Preheat oven to 375 degrees.
  • Line standard muffin tin with paper liners.
  • In a medium bowl, mix flour, baking powder, cinnamon, baking soda and salt.
  • In a large bowl, whisk together eggs, brown sugar and melted butter.
  • Stir in the applesauce until the mixture is fully incorporated.
  • Pour the dry ingredients into the applesauce batter and mix until just combined.
  • Using a standard cupcake scoop, fill prepared muffin cups with batter.
  • Bake until muffin centers spring back when touched and are light brown, 15-20 minutes, rotating pan once if needed. Enjoy!
