Need a fun kids recipe for Valentine’s Day?
Try our simple and cute Veggie Valentines! We’re feeling a lot of L.O.V.E. for our super foods this week as we enjoy a great semester with our Super Foodie chefs! Recently, black beans were our super food of the week and we loved the recipe so much, we wanted to share it with everyone. We tend to think about brightly colored fruits and vegetables as our best source of phytonutrients, but it turns out that black beans are a strong contender in healthy nutrients. The seed coat of the black bean (aka its skin) is an outstanding source of good stuff for our bodies. All told, the black bean has over 11 mega healthy-helpers with crazy long names that ultimately help with the energy output for our bodies! And they’re so tiny! Black Beans, will you be my valentine?

Veggie Valentines Recipe
Makes: 5 Veggie Valentines
Ingredients
- 1/2 cup cannellini beans, rinsed and drained
- 2 tablespoon olive oil
- pinch cumin
- pinch paprika
- 1 tablespoon chopped cilantro
- salt and pepper to taste
- 5 whole tortillas
- 1/2 red pepper
- 1/2 cup black beans
- variety of veggies and cheese for decorating
Instructions
- Preheat oven to 425 degrees.
- Cut each tortilla into a heart. Paint each side with olive oil. Bake in the oven just long enough to become crispy.
- In a food processor, pulse cannelloni beans, olive oil, cumin, paprika, cilantro and salt and pepper together until it reaches a thick, paste-like consistency.
- Once the tortilla is cool, spread the bean mix evenly as a base layer.
- Use your favorite veggies (we love black beans for their super food strength!) and cheeses to create a very special valentine treat. If desired, pop back in oven to toast until warm. Enjoy!
